Brown Butter Miso Corn Pasta

We are in peak tomato season, which is why we should all be eating our tomatoes and wearing them too— printed on clothes, drippy juice stains, sticky hands the whole thing. I’m honest when I say I’ve never known myself to be the housedress type, but I tried a few out thanks to Maddie Bing, founder and designer behind This Is My Housedress. This one was comfortable, with deep pockets to store anything really! If I was in the garden at home I’d use them to gather instead of a bowl. The Grace Housedress Tomato Garden one was fit for a midday weekend lunch, comprised of high-protein Rummo pasta, farmers’ market corn, browned butter miso, and raclette — if you know me, then this is no surprise. Pasta makes me all kinds of giddy!

I’ve noticed over the years that I like my pasta on the drier side. Not too saucy, not drowning. However, I’m working on making my sauces saucier because as they sit in the pan, waiting for a second helping, they absorb everything! As is the case above. It took me about an hour to get the right photos, and as the pasta sat, it basically turned into buttered pasta. A very important tip: pasta water. When in doubt, turn to your thick, starchy pasta cooking water to make sauce happen.

Brown Butter Miso Corn Pasta

Ingredients

  • 8 oz high protein rotini Rummo is a great option
  • kosher salt
  • 2 tbsp unsalted butter
  • 1 cob corn, kernels shucked
  • 1 clove elephant garlic, sliced (or 5 cloves garlic, minced)
  • 1 tbsp white miso
  • 1/4 cup raclette cheese

Instructions

  • In a large skillet over medium heat, melt butter. Once it begins to turn lightly golden brown add corn and garlic. Cook until corn is vibrant, and garlic is soft and fragrant, about 4 to 6 minutes.
  • Meanwhile bring a pot with 2 quarts of water to a boil. Season with salt (to taste) and add pasta. Cook until al dente, about 8 to 10 minutes. Fold pasta into sauce. Add pasta water 1 to 2 tablespoons at a time until it reaches your desired saucy consistency.
  • Fold cheese into pasta until melted. Eat right away!
