Brown Butter Miso Corn Pasta

Ingredients

  • 8 oz high protein rotini Rummo is a great option
  • kosher salt
  • 2 tbsp unsalted butter
  • 1 cob corn, kernels shucked
  • 1 clove elephant garlic, sliced (or 5 cloves garlic, minced)
  • 1 tbsp white miso
  • 1/4 cup raclette cheese

Instructions

  • In a large skillet over medium heat, melt butter. Once it begins to turn lightly golden brown add corn and garlic. Cook until corn is vibrant, and garlic is soft and fragrant, about 4 to 6 minutes.
  • Meanwhile bring a pot with 2 quarts of water to a boil. Season with salt (to taste) and add pasta. Cook until al dente, about 8 to 10 minutes. Fold pasta into sauce. Add pasta water 1 to 2 tablespoons at a time until it reaches your desired saucy consistency.
  • Fold cheese into pasta until melted. Eat right away!
