Leftover Mashed Potatoes Shouldn’t Be a Drag

Thanksgivings’ this week and there’s so much to do. If you’re hosting, good luck. If you’re joining someone else’s party make sure to bring something good- so you’re invited back! But, whatever you’re doing it’s gonna be great- lots of giggles, warm tummy’s, chummy vibes. I assume you’re gonna have a mound of mashed potatoes, stuffing, or mac and cheese piled on your plate? What about the leftovers… I think they’re lauded more over the initial meal. There’s dozens of ideas and recipes that plug in thanksgiving leftovers into a formula for lunch and dinner ideas.

Mashed potatoes aren’t the first thing I reach for at dinner. I don’t dream of them any other time of year either. Offer them up roasted or deep fried—I’m all in. So, what do you do with leftover mashed potatoes?
